MouCo's purposeful selection of premium cheeses to take from milk to mold for you, our customer, has resulted in creamy soft-ripened Camembert, ColoRouge, and Blü. Learning from the best and sourcing from the freshest local milk, we have thoroughly enjoyed establishing our small cheesery. We invest care and precision into each step of our handmade process, forgoing artificial colorings, preservatives, or additives. Our cheeses are wrapped in a special cheese wrapping paper imported from France, which allows the cheese to age properly throughout its shelf life, ensuring you the best flavor experience possible.

Our Story

Birgit Halbreiter, president of MouCo Cheese, grew up in Memmingen, Germany, a part of Bavaria and worked for one of the world's largest soft-ripened cheese manufacturers, Käserei Champignon. After leaving Germany, she worked for a variety of food manufacturers acting as everything from Quality Assurance Manager to actively participating on the board of directors for the nation's fastest growing brewery, New Belgium Brewing Company. Birgit is currently acting in quality assurance and market analysis roles for our cheesery. Robert Poland, our vice president, grew up in Boulder, Colorado and spent 9 years working as fermentation manager of the same brewery where Birgit worked...but that's another story...Robert is currently overseeing much of the day to day operations of our cheesery including cheese making and curing. A few years after meeting, their home cheesemaking endeavors began with the help of Birgit's father, Franz Halbreiter, a 47-year master-cheesemaker living in Germany. After several years of casual home cheesing, it became obvious the quality and consistency for a premium brand line of cheese would be possible and fun. And so Birgit and Robert both left the brewing industry and incorporated the MouCo Cheese Company on July 7th of 2000. At least one month out of every year, Franz visits from Germany and acts as a consultant to the cheesery, working with Robert on quality, sanitation and development issues. The same styles of cheese he has spent most of his life making, are what the MouCo Cheese Company is concentrating on. A year of planning and child raising proceeded the opening of our artisan cheesery, located in Fort Collins, Colorado. The first sale was June 6th, 2001 to Beavers Market, a small local market in Fort Collins. Since then, we have been honored to retain some of the nation's top restaurants and retail establishments as dedicated customers. The Brown Palace in Denver, Colorado; Ritz Carlton's, Q's; and Arterra are some of the restaurants that serve our cheese.
