The first cheese we started producing. Once you taste it you will know why, with 45 years of family experience, it continues to be a classic favorite.
We start by using the best milk in our area, which happens to be from a new state-of-the-art dairy only a few miles away. Which means the milk is some of the best in Colorado, and we start making cheese with it only a few hours out of the cow.
As weeks pass, this cheese will transition from soft and mild to stronger and more complex with an even softer middle. The details of this aging process and a date code come with each cheese so you can discern the status of your individual cheese.
